Famed for his boundary-pushing creativity and refined palate, Elzer brings his French-Mediterranean vision to life in a setting as theatrical as the cuisine itself. Inspired by the opulent fictional character Madame Pearl Collins, the restaurant is housed within a lavish pink mansion, designed by renowned architect Bill Bensley. With vintage flair and oceanfront elegance, guests are transported into a world of indulgence. The vibrant atmosphere is further enhanced by the striking art installations that reflect Marco Luccio’s artistic vision, seamlessly merging culinary delights with visual storytelling. Born in Alsace, France, Chef Olivier has built a 30-year global career across iconic kitchens in Europe and Asia. Now based in Hong Kong, he brings his East-meets-West finesse to Vietnam for the first time. With 27 Michelin stars across his journey, his philosophy is clear – create food that is elegant yet approachable, timeless yet innovative.

At Pink Pearl by Olivier E., diners can expect bold takes on French classics, elevated with Mediterranean soul and Vietnamese heart. A standout is the charcoal-grilled Bonito served with Endive Salad, Comté Cheese and Vierge Sauce – a dish that showcases Chef Olivier’s respect for local produce and traditional techniques. Other highlights include his Bohémienne of Eggplant, Tomato and Parmesan, and Octopus with Hummus, Pomegranate and Spices.

The experience doesn’t end with the à la carte options. Two exclusive tasting menus – five and seven courses – are available, curated to reflect the chef’s culinary journey and paired expertly with wines selected by Master Sommelier Bertrand Lutaud. In addition to these exquisite offerings, diners can indulge in Rufio’s Sunday roast menu, which showcases seasonal ingredients and traditional flavors in a contemporary style. This hearty option is perfect for those looking to savor a classic meal while enjoying the warm ambiance of the restaurant. Each roast is accompanied by carefully crafted sides and sauces that elevate the dining experience even further.
