Holiday Inn & Suites Geelong spot serves sharing plates and regional

Maestro Restaurant, inside Holiday Inn & Suites Geelong, serves breakfast through dinner with a modern Australian menu built on sharing plates, seasonal produce and regional ingredients.

Head Chef Kiran Chauhan leads the kitchen at the Geelong venue.

Each day starts with buffet and à la carte breakfast, before the menu shifts to evening dishes made for the table.

Small plates include beef cheek croquettes with chipotle salsa and aioli, grilled king prawns with crab fat garlic butter and house pickles, arancini with spicy sugo and grana padano, and tuna crudo with ponzu, chilli and spring onion.

Larger dishes include pressed lamb shoulder, pan-seared barramundi, house-made orecchiette and O’Connor Black Angus bavette.

Dessert highlights include Maestro’s signature tiramisu.

Chauhan’s menu focuses on familiar flavours, careful technique and ingredients diners will recognise.

Throughout the week, Maestro runs its Daily Rituals programme with Steak ‘N’ Chips nights, share-style Feed Me menus, Friday oysters and all-day happy hour.

High Tea adds sweet and savoury dishes, alongside premium teas from Geelong-based Australian Tea Masters.

Near Geelong Arts Centre, Maestro sits close to the city’s cultural and sporting precincts.
