The Meat & Wine Co will open a 220-seat Collins Street restaurant in late July, with three private dining rooms and a new African Sky design concept.

The venue will include three private dining rooms and will become the steakhouse brand’s latest Melbourne site, adding to its existing restaurants in Southbank, South Yarra, Chadstone and Hawthorn East.

Construction is underway on the Collins Street restaurant, which will sit within Melbourne’s commercial and luxury retail precinct. The company says the venue has been designed for corporate dining, client entertaining, celebrations and smaller private bookings.

Seagrass Boutique Hospitality Group CEO Ravi Singh said Collins Street would be the brand’s first Melbourne restaurant with its Safari design concept.

“Melbourne remains one of the most sophisticated hospitality markets in the country. The Meat & Wine Co already has a strong presence across Southbank, South Yarra, Chadstone and Hawthorn East, and Collins St will become our first ‘Safari’ design-inspired Melbourne location, which is an exciting milestone for the brand,” Singh said.

The new venue will also be The Meat & Wine Co’s 14th restaurant in Australia.

African Sky design planned for Collins Street

The Collins Street restaurant will feature a design concept called African Sky, developed by international design studio COOOP.co.

The concept takes inspiration from the colours, textures and atmosphere of African savannah landscapes. A large draped ceiling installation will sit at the centre of the dining room, using theatrical lighting to create a twilight effect that changes through the day and evening.

COOOP.co Australia principal and creative director Callie van der Merwe said the design was intended to focus on atmosphere rather than direct recreation.

“The African Sky concept is about capturing a feeling rather than recreating a place,” van der Merwe said.

The menu will centre on steak cooked over a high-temperature grill and finished with the brand’s 35-year-old signature basting.

Cuts will span three provenance tiers: Monte grass-fed beef, O’Connor long grain-fed beef and Mayura Station Wagyu. The restaurant will also offer its AGED Programme, which includes extended dry-aged and butter-aged beef.

Other menu items listed for the Collins Street venue include AGED Wagyu Tartare, Yellowfin Tuna Sashimi, Mozambican peri-peri King Prawns, Blackcurrant Kangaroo Skewers, flame-finished beef and pork ribs, Truffle Mac’&’Cheese and Chocolate Fondant.
