When Shelanous first opened in Port Melbourne earlier this year, it quickly became one of the city’s hardest-to-book venues, drawing diners from across the globe, even Katy Perry made it a must-visit during her stay in Melbourne. Now, chef and co-owner Rony Parienty and his team are ready to open their next chapter in Caulfield.

Like its sibling, Shelly will offer a 10-course degustation menu with matching beverages, blending fine dining with an immersive theatrical twist. Guests can expect a sensory journey that engages sight, sound, and taste, wrapped in a setting designed to astonish.

Shelly’s Sense Bar, 30-seat dining room, and dazzling starlight ceiling will create a visually breathtaking backdrop for an evening of indulgence. And for the first time, a limited number of walk-in guests will be welcome, making this high-end experience just a touch more accessible.

Every dish will be kosher-certified and halal-friendly, reflecting a commitment to inclusivity while maintaining impeccable quality. Guests can also enjoy a ‘trust the Chef’ mini degustation, perfect for those who crave surprise and creativity.

“The demand for Shelanous since opening has been overwhelming,” said Rony Parienty, co-owner and chef of Shelanous and Shelly. “We’re constantly booked out two months in advance and we love seeing people enjoy the experience we deliver alongside the great food and drinks. But, with a waiting list this long, we knew it was time to open another location. Opening Shelly in Caulfield will not only allow us to meet demand, but also create a whole new high energy experience for our guests. We can’t wait to welcome people when we start this new chapter.”

The concept brings together storytelling, flavour, flamboyance, and fun, ensuring that every meal is as entertaining as it is delicious. Guests are encouraged to embrace the communal spirit, share the experience, and perhaps even leave with a few new friends by the night’s end.

Shelly isn’t just a restaurant, it’s a stage, an experience, and a celebration of food as art.
