Bottomless Steak Launches at 98 Lygon St

Bottomless Steak brings unlimited dry-aged porterhouse to Brunswick East from 25th February 2026

Unlimited dry-aged porterhouse will be served weekly at 98 Lygon St Bar and Bistro from Wednesday, 25th February 2026. The Brunswick East venue will introduce Bottomless Steak as a recurring midweek service focused on premium grass-fed porterhouse, sliced thick and refilled on request.

The offering centres on the venue’s established steak frites. Each serving includes peppercorn sauce and crisp frites. Moreover, the kitchen will introduce rotating off-menu additions throughout the series to vary the experience across sittings.

Bottomless Steak will operate every Wednesday from launch. Guests will order drinks separately, with wine and cocktails available on consumption. In addition, the venue will offer cellar pours by the glass and large-format bottles for the table.

The kitchen is led by Michelin-trained Head Chef Brian Macalister, who oversees the bistro’s modern European menu. Consequently, the Bottomless Steak format aligns with the broader culinary direction of the venue while maintaining its core steak offering.

Co-founder Ben Clark said the concept focused on consistency and generosity. “Wednesday is a night when people already enjoy dining out. This was about generosity, quality and creating a midweek ritual people look forward to.”

Co-founder Simon Aukett said the format reflects the venue’s approach to hospitality. “It’s indulgent without cutting corners,” he said. “The full experience, done properly, week after week.”

Weekly Midweek Service Format

Bottomless Steak will run weekly from 25th February 2026. However, the format will not include set drink packages, with beverages ordered independently. The venue confirmed that seats are limited and bookings are required.

98 Lygon St Bar and Bistro opened in May 2025 and operates seven days a week. The venue serves food and drinks from midday until late, with a menu that blends classic bistro dishes and Mediterranean influences.
