Sharing plates and spring cocktails head upstairs, while The Observatory gets plush booths and vinyl DJs
Garden State Hotel has taken its greenery upstairs, opening a two-level rooftop garden for 300 guests on Flinders Lane.
Above the existing beer garden, the new space pairs an open-air lower terrace with a raised mezzanine seating up to 40 people. A retractable roof and heating mean outdoor drinks needn’t depend entirely on Melbourne behaving itself.

Sage-green mosaic stairs connect the levels, surrounded by layered planting, climbing greenery and arched details. Woven chairs, high bar seating and upholstered banquettes give the rooftop a mix of spots to settle into.
The changes come 10 years after the venue opened, extending its original multi-level garden concept.
“Melburnians love a good rooftop, so we’re excited to bring this new elevated space to Garden State in time for spring warming up,” Venue Manager Katie Saxton said.

Prawn rolls, oysters and a peach spritz
The rooftop menu makes a strong case for ordering a few plates for the table. Prawn rolls come with dill mayo and lemon, while stracciatella is paired with cucumber, honey, black pepper and focaccia.
There are truffle arancini with black garlic aioli and parmesan, plus kingfish crudo with parsley, chilli and lemon. Sydney Rock oysters get caviar and limoncello vinaigrette, and flatbread comes with olives, walnut romesco, honey labneh and spiced seeds.

“The menu is grounded in the produce around us, with locally sourced ingredients, Victorian beef and seasonal produce shaping the dishes,” Head Chef James Wilkinson said.
Spring drinks include a Rhubarb & Pomegranate Spritz, Matcha Martini and Pineapple & Mint Mule. Garden State’s seasonal Chandon partnership also brings a Peach in the Garden Spritz, made with Chandon, vodka, peach, lemon and rosemary.
The Observatory turns to cocktails and vinyl
The Observatory has had its own makeover, with plush booths, bespoke cocktails and bar snacks creating a more intimate setting for the evening.

Vinyl DJs supply the disco, funk and soul. Entry is walk-ins only, so there is no booking required for this part of the night.
The refreshed spaces sit alongside Tippy Tay, the Rose Garden basement bar and the venue’s existing main bar and private function rooms.
