Enbarr restaurant launches after restoration of historic Quiet Man site

A new Irish restaurant, Enbarr, has opened in Flemington following the restoration of the historic pub previously known as The Quiet Man. The venue forms the latest project from Irish hospitality group Zengal. The group is led by Zenita O’Neill and James Gallagher.

The project follows the pair’s earlier Melbourne venues Jimmy O’Neils and Naughty Nancy’s. However, the Flemington property marks a return to the building’s earlier identity as Aunty Annie’s. The owners have completed a full renovation of the site.

The redevelopment introduces a dedicated dining space focused on contemporary Irish cuisine. The menu combines Irish culinary traditions with Victorian produce. Additionally, the venue incorporates Irish mythology and storytelling throughout the design.

During restoration works, builders uncovered a concealed timber staircase believed to be around 150 years old. The staircase features intricate carvings of horses. It had remained hidden for decades inside the building.

The discovery shaped the identity of the new restaurant. Consequently, the venue adopted the name Enbarr. In Irish mythology, Enbarr is the legendary horse said to travel across both land and sea.

The staircase now stands prominently in the foyer. The restoration preserved the original carvings. As a result, the structure connects the building’s history with the restaurant’s mythological inspiration.

Meanwhile, Irish-born Group Executive Chef Declan McGovern leads the kitchen. He brings nearly two decades of experience across Ireland, the United Kingdom and Australia. His career includes senior roles at The Landmark London and Galway’s O’Grady’s on the Pier.

McGovern has also worked within Matt Moran venues in Sydney. Additionally, he held roles at Crown Resorts at Flemington Racecourse. His experience spans both hotel dining and large-scale hospitality operations.

Menu focuses on modern Irish techniques and Victorian produce

The restaurant operates as a distinct dining room within the building. The dining area sits separate from the adjoining bar. This layout allows the restaurant to operate with its own service style and menu structure.

The interior design remains modern and restrained. Neutral materials and simple finishes define the dining space. Consequently, the environment supports a contemporary interpretation of Irish cuisine.

McGovern’s menu draws on traditional Irish cooking methods. Techniques such as curing, preserving and smoking appear throughout the dishes. However, the ingredients come primarily from Victorian seasonal produce.

This approach reflects developments within Irish cuisine over the past decade. Irish chefs increasingly combine heritage techniques with modern presentation. Enbarr applies the same philosophy within a Melbourne dining context.

“Enbarr is our love letter to Irish hospitality. We want guests to feel the warmth of home, the precision of fine technique, and the excitement of discovery in every bite,” said McGovern.

The restaurant operates as a mid-tier dining destination. Therefore, the experience centres on a curated seasonal menu. Guests can explore modern Irish cooking without the structure of a tasting-only format.

Additionally, the kitchen will introduce an updated autumn and winter menu at the end of March. The seasonal change marks the next stage in the restaurant’s development. It also reflects the venue’s focus on evolving menus built around available produce.
