Detroit-Style Pizza, A Beer Garden And An Upstairs Listening Lounge Will Feature At The Fitzroy Street Pub

The Saint Hotel will reopen on St Kilda’s Fitzroy Street in November 2026 with a public bar, Detroit-style pizza and a cocktail and listening lounge.

Refinery Group, which operates The Angel of Malvern, is taking over the two-level venue at 54 Fitzroy Street. Executive Chef Justin North is developing the menu, with pub classics alongside Santos Pizzeria’s Detroit-style pizzas and pizza crust dippers.

On the ground floor, the Public Bar will sit alongside the pizzeria and a beer garden. Upstairs will house the Balcony Bar, private dining and the cocktail and listening lounge, with vinyl and DJ programming.

Refinery Group General Manager Operations Liam Burns said the venue was intended to accommodate everything from a quick drink to dinner and a night upstairs.

“The Saint Hotel will be a spot you can drop in for a beer or a glass of wine, stay for dinner, meet a few friends or kick on into the night.”

A Saint Lager created for the Public Bar will feature among the beers. The drinks offering will also include local and international wines, spirits and cocktails influenced by aperitivo culture.

For North, the food will centre on familiar dishes designed for a pub setting.

“Every neighbourhood deserves an awesome pub, and that’s really what we want The Saint to be for St Kilda. The food is relaxed, sociable and familiar, but there’s serious technique behind it,” North said.

From A State Savings Bank To A St Kilda Pub

Built as a State Savings Bank in 1914, the building has since operated as a pub, nightclub and restaurant.

Melbourne designers Studio McCue are responsible for the interior architecture, while Refinery Group’s internal design team has shaped the furniture and fixtures.

The fit-out will combine warm walnut, exposed brick, terracotta and brushed steel with patterned upholstery and vintage St Kilda prints. Custom pieces will include a bespoke Saint pool table.

Project Design Manager Holly Stevens said the interiors were intended to reflect the neighbourhood’s character.

“We wanted the fitout to feel warm, layered and a little unexpected, with the character and irreverence of St Kilda running through it.”
