Nikkei Nights Will Serve A Four-Course Japanese-Latin Menu In Collingwood On 28th May 2026
Nikkei Nights will take over Pincho Disco in Collingwood for one night on Thursday, 28th May 2026, with Colombian head chef Diego Cardenas serving a four-course menu shaped by Japanese technique and Latin American cooking.
The dinner will run from 6.30pm to 10pm at the two-level restaurant and bar on Cambridge Street. Tickets are priced at $150 per person, plus a $6.65 booking fee.
The event centres on Nikkei cooking, a culinary style that grew from more than a century of Japanese immigration to Peru. Its influence can be seen in the way both cuisines use seafood, citrus, soy, heat, precision and balance.
At Pincho Disco, that connection will run through a menu that moves from sashimi and maki through slipper lobster, wagyu striploin and Japanese cheesecake. Each course will be paired with a cocktail using House of Suntory Japanese spirits.
A Suntory ambassador will guide the drinks side of the evening, with Japanese spirits served through Latin American-inspired cocktails.
The Four-Course Menu
The dinner will begin with a platter of premium sashimi, market nigiri and maki roll, served with wakame, tiger’s milk and yuzu-ponzu. It will be paired with a Burnt-Butter and Plum Old Fashioned.
The second course will serve slipper lobster anticucho with nitsuke sauce and katsuobushi, matched with a Japanese Slipper Meets Whiskey Highball.
For the main course, guests will be served wagyu striploin MB 6-7 with yakiniku sauce and apple, alongside huancaína risotto, mixed leaves and kyuri. The pairing for this course will be a Sakura and Jasmine Gin Cocktail.
Dessert will close with Japanese cheesecake, lucuma ice cream and miso-caramel sauce, matched with a Coconut Matcha-style Dessert Cocktail.
Pincho Disco is approaching three years of operation in Collingwood. The restaurant sits on the corner of Cambridge and Langridge streets, with a dining room and bar known for Latin American food, cocktails and live entertainment.
Nikkei Nights adds a one-night dining event to the venue’s regular week, with bookings available through Humanitix.
