DOLLY at Le Méridien Melbourne will relaunch its jazz dinner series this April 2026, introducing a weekly line-up of live performances in Melbourne CBD as part of Jazz Appreciation Month. The return of the jazz dinner format signals a broader shift toward pre-booked, bundled dining experiences as venues look to lock in weekend revenue earlier and reduce reliance on late walk-in trade.
Running every Saturday night throughout April at 20 Bourke Street, Melbourne, the jazz dinner series will feature performances from The Night Creatures between 6:30pm and 9:30pm. The format centres on a fixed dinner and show structure, where guests commit to a full experience upfront, reflecting a growing preference for structured, time-based hospitality over traditional à la carte dining in the CBD.
DOLLY’s continued expansion of this format highlights how Melbourne CBD venues are increasingly competing on curated experiences rather than location alone. While inner-north precincts such as Fitzroy and Collingwood maintain more organic late-night traffic, the CBD is shifting toward scheduled, experience-led nights to rebuild post-10pm trade and drive consistent footfall.

The series will culminate on Saturday, 25th April 2026, with The Grand Jazz Dinner Show, a one-night event featuring a five-piece band and a four-course dinner. Tickets are priced at $82 per person, positioning the experience below premium dining while still capturing occasion-based spend, and removing pricing friction through a bundled format that combines food, entertainment and atmosphere in a single booking.
The food offering is led by Executive Chef Hervé Borghini, a Bordeaux-born, Michelin-trained chef, with a menu focused on French bistro classics including steak frites, confit duck and a flaming bombe Alaska dessert. Champagne and caviar service, alongside a curated wine list, reinforce the venue’s positioning as an occasion-driven destination rather than a casual dining option.

This approach reflects a wider operational shift across Melbourne hospitality, where pre-paid and ticketed formats are increasingly used to manage capacity and stabilise revenue across peak trading periods.
